This is perhaps the most simple, quick, and lovable recipe possible with large eggplant. We have used equal quantity of corn and gram (besan) flours to increase the crispiness. Mustered Oil is preferable in this dish to give authentic taste, however, it is totally optional. You can serve these crispy brinjal in lunch or dinner with roti, chapatti, naan, or puri.
Healthy Twist – We have top-up our brinjal with omega 3 fatty acid rich seeds i.e. flax, basil, & sesame seeds.
